Protein Brownies

I make these once a week because they are THAT good and THAT easy and THAT healthy!
I receive new protein so I decided to make them using WfitNutrition Chocolate mocha protein. 
I change up the recipe weekly by changing the protein flavors or the extracts.

Protein Brownies:
1 can rinsed/drained black beans
2 eggs
2 1/2 scoops WfitNutrition chocolate mocha protein 
2tbsp melted coconut oil 
1/2c (or so) almond milk
1 tbsp vanilla extract (or peppermint or butter or almond or any really)
1 tbsp unsweetened cocoa powder
Stevia 
1. In a blender, add beans, eggs, almond milk, extract, coconut oil and stevia. Blend until really smooth and all the black bits are gone. 
2. Add cocoa. Blend. Need more liquid? Drizzle in some almond milk while blending.
3. Add half a scoop at a time while blender is on. Add almond milk as needed. 
4. Pour into lined 8X8 pan or a cake pan. 
5. Bake 350 for 18-20mins. I pull mine out at about 18. Allow to cool before cutting. I get 8 bars out of it.

I really want to double the recipe and use two cake pans and create a layered chocolate cake with a paleo coconut cream frosting...maybe that's to come!

Protein Oatmeal Cookies

Wet:
1c almond mik
1/2c pumpkin (I'm sure applesauce could work too)
1 banana
2 eggs
1tsp vanilla

Dry:
2c oats 
1/4c flax
2tbsp seeds
1tbsp xantham gum (or coconut flour)
1tbsp cinnamon
1tsp baking powder
2 scoops wfit nutrition protein (or any protein)
1/2c add-ins (nuts, fruit, choc chips)
1. Beat/mash wet ingredients together in a bowl. I used my mixer for this.
2. Mix dry in seperate bowl.
3. Add dry slowly to wet.
4. Fold in add-ins if you want or do like I did and put on top so friends/family know what they're eating.
5. Bake 400, 12mins. I made 2 dozen.

Paleo Crunch


Paleo Crunch:::

Dry=
2 scoops protein (I used vanilla)
3/4c almond meal
3/4c unsweetened coconut flakes/shredded
1 1/4c each-3 types seeds/nuts  (I used slivered almonds, chopped cashews, chopped pecans)
1tsp cinnamon

Wet=
1/2c coconut oil
2tbsp seed/nut butter
1tbsp honey
1tsp vanilla

Directions:
Mix dry. 

Nuke wet ingredients in separate bowl. I heated the coconut oil first so it's not solid then added the rest.
Add wet to dry. 
Stir really well.
Pour onto two lined pans. 
Bake 350 for 15-20m. 
Stir once or twice so it doesn't burn. check frequently after 15m, will burn quickly on you. 



Can add in dried fruit if wanted.

Sweet Baked Chickloaf

🔹Sweet Chicken Loaf🔹
-1 c chicken (about 6 tenders or 2 breasts- OR use ground chicken)
-1 Egg white
-1 tsp cinnamon (or more cause I❤it)
-1/2 tsp nutmeg
-3 tbsp coconut flour (OR 1/4c oats for non paleo) 
-3 tbsp applesauce (I used homemade-chop, nuke, blend)
1. Blend chicken. 
2. Mix coconut flour, applesauce, and spices together and add water until it becomes a thin paste. 
3. Add chicken, EW, and paste together. Mix up really good. 
4. Scoop into loaf pans. 350 for 35mins.

* optional add ins: apple pie spices, nuts, coconut, stevia.

Creamy Vanilla Truffles

🔹Creamy Vanilla (apple) Truffles🔹
-2 scoops Vanilla Protein (I used #cellucor)
-5 tbsp coconut flour
-1/4c applesauce (homemade-chop, nuke, blend)
-1 tsp vanilla extract
-1/3c water (or almond milk)
Mix. Slowly add the water/milk. ▶Should be a pasty consistency. Roll into balls (I got 20) and stick in freezer.
-1 tbsp coconut oil
-2 tbsp cocoa powder
-1 tbsp chocolate protein (I used Cellucor's)
-stevia
▶Nuke or put on double boiler. Dip or drizzle chocolate over balls (I drizzled). 
You can't really taste the applesauce, it just makes these uber creamy! I keep in freezer and thaw.

Cinnamon Swirl FroYo Sandwich

🔷Cinnamon Swirl FroYo Sandwiches🔷
I made @jazzythings (from IG) Cinnamon Swirl Protein Cake into muffins...and then stuffed them and froze them into 'Ice Cream Sandwiches'.
🔹Make the protein cake/muffins. I snapshot her profile pics of it so get recipe in right below.


🔹"FroYo": NFplain Greek yogurt mixed with #cellucor vanilla protein.
🔹Slice muffin in half (make sure these are cooled and chilled), smear yogurt between the two. Freeze.

(Nuke a bit or let thaw. Top with whatev)

These aren't for me to eat since I don't eat dairy but more an experiment for ya'll!!!

Protein Snickers

🔹Protein 'Snickers'🔹
*Bottom Layer:*
-1 scoop choc protein
-2 tbsp coconut flour
-liquid stevia
-2tbsp cocoa power 
-enough water to make into paste
Mix & pour into cups or pan.
*Middle Layer:*
-2tbsp nut butter
-4tbsp honey
-1/2 scoop vanilla protein
Melt honey & nut butter. Stir I'm protein. (Add more honey if too thick)  pour on top of other layer. Add chopped nuts on top. 
*Top Layer:*
-2tbsp coconut oil
-1.5 tbsp cocoa powder
-liquid stevia
Melt oil. Add cocoa & stevia. Mix. (Add honey if too thick) Pour over nuts. Freeze. Let defrost for 5-10 before eating or if you can't wait, nuke for 10secs!

Banana Protein Soufflé

*Banana Protein Souffle*
-1 egg white 
-1 mashed banana
-1 scoop Cellucor's Cinnamon Swirl Protein
-vanilla extract
-stevia
-water
1. Mix in a mug. Nuke for 2 mins. (Be careful it doesn't overflow; stop and restart if this happens).
2. Pour out into a bowl (will be runny). Nuke another 30secs.
3. It comes out volumous and fluffy and OMG just soooo gooood! I didn't want it to end!

Breakfast for Dinner!

This morning a busted out a hard 1,000+ rep leg WOD so today I've been feedin my muscle lots and lots of clean eats! This was my meal 6 and last meal of the day.
Coconut Flour Pancake:
-2tbsp coconut flour
-2 egg whites
-1 scoop protein (I used Cellucor's vanilla)
-liquid stevia
-water to loosen
1. I added all to my shaker bottle & shook up.
2. Cool like normal pancake in a pan (I used coconut oil)
*i topped mine with 1 tbsp of peanut butter and my homemade vanilla very chia seed jelly (previous posts). Also some prunes on the side.

Protein Cookie Dough Frozen Cups

Protein Cookie Dough Frozen Cups:

-protein cookie dough (previous post or down below)
- 2-3 tbsp PB (or any nut butter)
-homemade choc
1. Add nut butter to dough.
2. Make choc (or melt choc chips).
3. Pour a little bit of choc into cups (I used silicon cups)
4. Scoop spoonful of dough mixture onto choc 
5. Pour more choc on top to cover the dough
6. Freeze

- 1 tbsp vanilla extract
-vanilla liquid stevia
-homemade chocolate chunks (or choc chips or carob chips)

2. Add 1 scoop protein, extract and stevia. Blend; scraping down sides occasionally.
3. Add 2nd scoop protein and blend until smooth.

-2 scoop any flavor protein (I used vanilla)
- 1 tbsp vanilla extract
-vanilla liquid stevia
-homemade chocolate chunks (or choc chips or carob chips)
1. Rinse and drain chickpeas. Put into blender, bullet, processor etc. and blend until starting to turn paste-y.
2. Add 1 scoop protein, extract and stevia. Blend; scraping down sides occasionally.
3. Add 2nd scoop protein and blend until smooth. 
4. Fold in chunks of chocolate. Refrigerate. 
* I had some with a sliced apple*

Avocado Chocolate Protein Mousse


🔹Avocado Choc Protein Mousse🔹
-1/2 avocado 
-1/2 banana
-1/4 c water 
-1tbsp coconut flour (optional-to thicken)
-1tbsp flaxmeal
-1scoop choc protein
-1tbsp cocoa powder 
-choc liquid stevia
-cinnamon
*blend and refrigerate or freeze till chill.
