Toasted Coconut Almond Butter

Mmm I absolutely love coconut! And nut butter!... So what better than to combine the two?!?
1 1/2 c almonds
3/4 c coconut
(Optional: 2 dates)
1. I toasted half the almonds with the coconut (on low).
You want a nice golden hue
2. Throw into blender after allowing to cool a bit. Pulse.
I added two dates (just adds some sweetness)
Blend blend blend
It's a process but the nuts will break down eventually.
I kept mine thick but if you keep going it'll go creamy.

Cinnamon Raisin Almond Butter

Cinnamon Raisin Almond Butter:
~2c almonds
~1/4c raisins (rinsed in water then laid out to dry)
~1tbsp cinnamon
~2-3 tbsp 100% maple syrup (100% comes straight from a tree so it's all natural & soooo good for you!)

.Make almond butter first with just the almonds; blend until creamy.

.Then, while blender running, add maple syrup and cinnamon.
.Add raisins and pulse until desired chunks. You can't really taste them as raisins; they really just add a sweetness. You can also add more raisins if you like them.
I keep mine in the fridge to keep it frah and make it last.

Blueberry Coconut (Protein) Bread

Blueberry Coconut Bread:

-1/2c coconut flour
-2 1/2 scoops WFit Vanilla Coconut Protein
-1 tbsp baking powder
-4 stevia packets

-1 1/2 apples (make applesauce-chop, nuke for 2mins, blend until smooth) or about 1c applesauce
-3 egg whites
-1 tbsp coconut extract
-1 tbsp vanilla extract
-1 tbsp coconut oil
1. Mix wet ingredients or blend in blender like I did.
2. Mix dry ingredients separately and then add to wet. I dumped mine into the blender.
3. Once smooth, fold in 1-1 1/2c fresh blueberries.

4. Pour into a loaf pan, I greased with coconut oil.

5. Bake 350 for 40mins.

Allow to cool completely (I made the mistake of digging in too early and it was a mess! But soooo good!)

Seriously so yummy and moist!
You don't have to use this protein, I'm sure vanilla would work but then add more coconut extract.

1c blueberries

.Mix dry.
.Mix wet separately.
.Add wet to dry.

Protein Stuffed Baked Apple

🍎Protein Stuffed Baked Apple🍎

-core out apple (cut out enough to stuff). I used a knife but you can start with an apple corer.

-spread nut butter inside (I used my homemade cinnamon-maple pecan butter). Any nut butter works.

-Filling: 1 egg white, 1 tbsp cinnamon swirl protein, 1 tbsp almond meal. Mix and pour in apple, (this is why you need to carve out enough apple).

-set apple in bake-able dish. Sprinkle with cinnamon, (next time I may drizzle with maple syrup so it caramelizes).

-bake 350 for 40mins.

-cut in half and top with whatever: honey, maple syrup, granola, cocoa nibs...etc.

-I topped mine with my Paleo Crunch, which was yesterday's post!

Homemade Chicken Tortilla Soup

Chicken Tortilla Soup:
8 chicken tenders shredded (seasoned & cooked however)
1 tbsp minced garlic
2tbsp olive oil
1/2 red onion diced
1 large bell pepper diced
2 chipotle peppers chopped (or 1 hott Jalepeno)
1 can diced tomatoes
1/2 can beans (black, white, kidney, garbanzo)
1/2 can beans (choose from above)
2 cans low sodium chicken stock
2 cans full of water
1 tsp chili powder
1 tsp pepper & sea salt
1. Cook chicken ahead. Use spicy seasonings to cook with. I used pepper, chili powder, and red pepper flakes.
2. Add olive oil to pot. Once hot, add garlic.
3. Stir and once fragrant, add onion, bell pepper, and chipotle. Cook and stir to allow veggies to become caramelized.
4. Add diced tomatoes. Stir and cook together for 5. Add seasonings.
5. Add chicken stock and water.
6. Once starts to simmer, add shredded chicken.
7. Allow to simmer for 15-20mins for all flavors to combine.
8. Toppings: cubed avocado, (and if not paleo), shredded cheese, tortilla strips, sour cream.

*since I'm paleo, I stuck with only avocado to add*
*this is pretty spicy which the chipotle pepper makes it be that way so omit or only use 1 if you don't like it too hott*
