Apple Nachos

After I posted my detox day and what I ate...I ending up eating again! Yes seriously my tomach wouldn't stop emptying!
-Slice a apple semi-thin (really depends on how many "chips" you want)
-top with whatever!!!
I topped with homemade chocolate (coconut oil and cacao powder), cacao nibs, mulberries, PB, my new toasted coconut almond butter.

I devoured these in no time.
P.s: they were messy!

Other topping ideas: sliced fruit, coconut flakes, seeds, nuts, cinnamon, stevia, choc chips, pure maple syrup...load them up high!

Detox Day

My detox day come on my recovery/mobility day which means no weights. 
Today I had absolutely no energy! I was freezing all day! I was wrapped up in a blanket watching my shows, blogging, making recipes etc.
I felt like I ate a lot but when I type it out, these are empty calories in my book compared to what I normally eat and intake.
Smoothie-greens, pineapple, date, coconut milk 

Banana, PB


Marinated salad-tomatoes, onions, avocado, cucumber, lemon, spices
Juice-Spicy V8

Smoothie-carrots, banana, coconut milk, almond butter, cinnamon, date

Handful of Berries

Salad-greens, bell pepper, mushrooms, avocado, cucumber, tomatoes, lemon
Steamed brussel sprouts

Chia seed pudding-
2 tbsp chia seeds soaked in 3/4c coconut milk blended with 3 dates, cacao, maca, almond butter.
Topped with strawberries, berries, PB

Man it's like my stomach never was full, yet it was upset alll day! I wanted to much on a big burger to be honest haha
I always wake up feeling better and I know my bod needs a break from all the protein I enhale!

Toasted Coconut Almond Butter

Mmm I absolutely love coconut! And nut butter!... So what better than to combine the two?!?
1 1/2 c almonds
3/4 c coconut 
(Optional: 2 dates)
1. I toasted half the almonds with the coconut (on low). 
You want a nice golden hue
2. Throw into blender after allowing to cool a bit. Pulse.
I added two dates (just adds some sweetness)
Blend blend blend
It's a process but the nuts will break down eventually. 
I kept mine thick but if you keep going it'll go creamy.

Espresso "Larabar" Bites

1 c oats
1/2 c nuts
1/2 c dried fruit (dates, prunes, raisins..)
1 tbsp ground coffee
2 tbsp nut butter
1/4 c 100% pure maple syrup 
1/4 c coconut shreds

1. Put in a food processor: oats, nuts, fruit, coffee, nut butter, syrup.
(I used almond butter for nut butter, prunes for the fruit, pecans for the nuts, and flavored coffee)

You'll have to stir it a few times.
It'll come together though. You can leave it chunky or keep going to make it smooth. I left mine chunky.

2. Toast the coconut.

3. I dumped my mix into a bowl
To roll into balls (you could totally make into mini bars or big bars)

4. Then roll (really roll and smash the coconut into them so they don't flake off).
(You could really roll them in anything you wanted like cocoa or choc chips or sprinkles even)
This is just one recipe. You could totally create these into your own and make different flavors based on the fruit or add-ins 
You could skip the coffee and add a tbsp of cocoa powder...

Oatmeal Protein Cookies

Wow so simple! Literally took me 15mins!
Oatmeal Cookies:
3 mashed bananas
2 scoops cellucor cinnamon swirl protein
1-1 1/2 c oats
1/4c almond milk (or any milk)
Optional add-ins: nuts, choc chips, dried fruit, etc.

1. Add protein to mashed bananas.
2. Slowly add milk as needed.
3. Stir in oats. I said 1- 1 1/2 cups because you can choose to keep them thinner or thicker. Add your add-ins if using.
4. Bake 375 for 10mins.

I sprinkled cacoa nibs on half and then sprinkled cinnamon on the other half.
I made pretty big cookies so you decide how big.

CrossFit: The Test of Fitness

Wow Crossfit HQ has done it again.
They made the BEST, and I seriously mean that, the most outstanding video of what Crossfit really is. Not just te perception or lazy term-no real words that make total sense and that stand firm. Meaning no one could come up against them in a debate and claim they are that the crossfit games athletes are not fittest on earth. They way they define what it takes and what it means to be fit and what fitness truly means.
Please watch it for yourself. It is 30mins but just turn off the TV and put this on instead
You wont regret it.

Protein Orange Julius

Orange Creamsicle:
1 peeled orange
2 peeled cuties
1 serving Vanilla Coconut WFit Protein or vanilla protein
Splash coconut milk (or any milk)
1 c ice
Blend really really really well to get ultra creamy. I blend the oranges and milk together first then add the protein and then the ice.

WFit Green Monster

So I've been obsessed with this smoothie
I have had it for three mornings straight!
Simple. Easy. 2 min Breakfast.
1 serving Wfit Vanilla Coconut Protein
1 c greens
1 chopped pear
Handful frozen pineapple
Almond milk
.i blend my almond milk and greens first so it breaks down really smooth.
.then add the rest.
I like to blend mine for 2mins so I know it's completely smooth-me no like chunks!.

Chocolate Orange 'Juice Pulp' Muffins

So I am currently gnarly bad sick so I have been juicing fresh orange juice and I have a lot of juice pulp.

Chocolate Orange Muffins:
2c oat flour
1 1/2tsp baking powder
1 tsp baking soda
2 1/2 tbsp unsweetened cocoa powder
1-1 1/2c orange juice pulp
Zest of 1 orange
2 egg whites
2 flax eggs
1 tsp vanilla

1. Mix dry ingredients.
2. Blend wet ingredients.
3. Add wet to dry. Stir really well.
(You could add cacao nibs or choc chips if you wanted)
4. Line muffin tins; bake 350 for 20mins. 

Allow them to cool completely otherwise they will stick.
This makes 12 muffins. 
The plain ones just simply don't have cocoa powder added to them.

Cafe Latte Oats

Ok photo quality sucks...but this was delish!
You can get the coffee extract or vitacost or iHerb. I have seen them both carry it.
(This is my serving-go to what you normally measure)
1c liquid (I use water) with a good pour of the flavoring (I use a lot because I like a strong flavor)
1 packet stevia
1/2c oats
1 egg white
. I make my oats in the microwave but you can make them however you please!.
I topped mine with one of my juice pulp muffins and almond milk!

I love this extract because when I crave coffee in the evening, I heat 1/2 water 1/2 almond milk and add this to it (taste testing for the flavor). Great for pregnant women!

Juice Pulp Dark Chocolate Chip Muffins

So I juice everyday so my pulp leftover builds up-I either freeze it or store in fridge to make some muffins. I stick with the fruit or sweet veggies for my muffins. This leftover pulp for this recipe was carrots, apple, orange, pineapple, and some greens. I pick through to get the right colors to know what veggies/fruits are which.
Juice Pulp Chocolate Chip Muffins:
1-1 1/2 c pulp (or just grate some carrots)
2 egg whites 
2 flax eggs (2tbsp flax + 6 tbsp water, let sit to gel up) or 2 more egg whites 
1 tbsp chia seeds soaked with 1 tbsp water (optional)
4 stevia packets
2 c coarse oat flour (grind up oats)
1 tsp baking soda
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 c 'Enjoy life' Dairy Free Soy Free Nut free Dark Chocolate Chips
1. I put my pulp in the food processor jut to smooth it out a bit but not completely smooth. Pulse in eggs, flax eggs, and chia seed gel.
2. Mix oats, soda, powder, cinnamon.
4. Add pulp mixture to oat mix.
5. Mix well then fold in the dark chocolate.
6. Bake 350 for 20mins. I make 12 muffins with this recipe.

7. Allow to cool completely. I leave mine in the oven overnight.

Juice Continues

I am trying to have one juice a day because no joke ever since I got the juicer, my skin has been so smooth and soft and cleared up! I don't know if it's a coincidence but I'm going to keep drinking one a day!
I make random concoctions. I don't go off a recipe or a recipe book.

Sunflower Seed, Almond, & Pecan Butter

This combo is amazing! And it's paleo!
I started just plai then decided to add some extract to kick it up a notch!
1/2c sunflower seeds
1c almonds
3/4c pecans
2 tbsp vanilla (I used pure vanilla)
1. Added te nuts to my vitamix and made it until smooth.
2. While blender on, add vanilla and allow to mix to combine.
3. Pour in jar and lick the spatula!

COR-Fetti Cake Batter "Quest Bar"

So I received a new delivery from Cellucor today and the new COR-Fetti Cake Batter protein came in! I didn't feel like a shake right then so I decided to make my Quest style Bars.

Same Recipe as before

2 tbsp VitaFiber (click link on the right)
1 tsp vanilla
1/4c COR-Fetti Cake Batter protein
1. Heat VitaFiber and vanilla. I nuke 15 seconds.
2. Add protein and start to stir and toss and move around (fast).
3. Once it's crumbly, wet hands and start to squish together and eventually pick it up to form a ball then into a bar shape.
4. Put on a piece of parchment paper. (I really put the ball on the paper then flatten out into a bar). 
5. Wrap it up. Store in fridge to set.
