So last night I prepped my overnight oats in my crunchy peanut butter jar (with a little still remaining) and this morning this is what i got:
yes indeed i enjoyed my Cocoa oats while watching 90210! They were so good! Cant you tell the jar didnt have an oat left in there.
Cocoa Banana Overnight Oats:
1/2 cup oats
1 tbsp chunky peanut butter (any nut butter works)
1/2 water
1/4 cup unsweetened homemade almond milk ( yesterdays post )
1/2 banana (mashed)
1 1/2 tbsp dark cocoa powder
1 tbsp chia seeds
1/2 scoop chocolate protein powder
splash of vanilla extract
Mix all together really good. Fridge. Enjoy in morning!
So it was Day 43 on LivFit which was Arm, Abs, and Cardio. I went through the moves twice and finished with 30 mins on stationary bike. I had my post-workout shake already made. Blended green tea, green tea leaves, ice, Sunwarrior Chocolate Protein, and 1/2 banana (remaining from breakfast); pretty such downed it in 2 mins.
After running some errands, when I got home I was hungry and wanted something fast:
Pumpkin Egg Whites:
1/4 cup canned pumpkin
2 eggwhites
1/2 cup Skim Ricotta Cheese
sprinkle of ground flax
2 tbsp toasted unsweetened coconut
1 tbsp homemade almond butter ( yesterdays post )
Put pumpkin in pan to heat, add both egg whites and whip together with whisk. Remove from heat to cool. I toasted coconut while it cooled. Pour in bowl, add ricotta and roughly stir. Sprinkle with flaz, coconut, and almond butter. I also had the last piece of my homemade whole wheat banana bread toasted.
Have any good recipes you've made with pumpkin you'd like to share? Or overnight oats?
